Jicima is a tropical plant native to Mexico with a delicious root that can be eaten raw or used as a substitution for water chestnuts in recipes. It needs a long growing season to produce the edible tubers, so it does best in zones 7-10. The flowers, buds, and leaves on the long 20' vines are poisonous to humans, so only eat the roots!
